This coffee was grown by Leonid Ramirez at the farm La Cortina de Hierro. This coffee was carefully hand-picked in order to select only the ripest cherries. Later, the cherries were fermented for 40 hours in an anaerobic environment. Then the cherries were pulped, gently washed, and sundried until ideal moisture content was achieved.
This microlot is 100% Variedad Colombia. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
Leonid has been involved in the coffee industry since he was a young lad. His father passed when he was 4 years old and his mother became the sole breadwinner of the family. Being the eldest, Leonid was responsible for his two younger brothers and needed to work to help make ends meet while he was still in school. He started working as a "chapolero" (the local term for a coffee picker) and gained experience in coffee production as a teen. Around 16 years ago, he became interested in purchasing his own land and came across an abandoned farm in Genova.
Leonid started slowly catering to the specialty market in 2004 but it wasn't until 10 years later will he get the recognition he deserves for his hard work, placing 23rd in the Cup of Excellence competition. In 2016, Cofinet started a relationship with Leonid and provided him with guidance with specialty coffee, experimental fermentation techniques and technical assistance.
